Extra-terrestrial Chili

I was inspired by a recipe I found online.  I made my own chili recipe but had some "interesting" additions.

1 can Red Kidney Beans
1 can Black Beans
1 can of Mixed Beans
1 medium yellow onion diced
1 diced Green Pepper
1 lb Cooked Ground Beef
1 can diced tomatoes
1 can whole tomatoes
2 tbsp. chili powder
2 pkg beef boullion
1/2 cup ketchup
1/4 cup brown sugar
1 serrano pepper chopped finely
Few dashes of hot sauce
1 shot of espresso
1 can of beer
1 tbsp unsweetened coaco

Mix all ingredients and cook in slow cooker all day. The longer the BETTER!!
We served it with a dollop of sour cream (of course) and cheddar cheese.

Papaya and Avocado Salad

This is a recipe from my girlfriend, which is adapted from Best of Bridge, that I make all year round! When papaya is hard to come by, I will use Mango. I am making this for a dinner party potluck!

Lettuce (again I use either green leaf or romaine, whichever is bettterr)
1 Papaya-Chunked
2-3 Avocados-Chunked
Green Onion-Diced

Dressing
Keep 2 Tbsp. of the Papaya Seeds
1/4 cup of Red Wine Vinegar
1/2 cup of Olive Oil
2 Tbsp. Honey
Mix in a food Processor and poor over Salad

So good, fresh and ADDICTING!

Revvved up Taco Salad

I make this for my husband per request, which is ALL the time. I simply love the dressing!! This is inspired by Sunny Anderson from Food Network

1st there are the obvs:
  • Ground Beef with Taco Seasoning
  • Lettuce-I use Green Leaf or Romaine
  • Red Pepper
  • Black Beans (half a can)
  • Corn (half a can)
  • Avocado
  • Green Onion
  • Cilantro
  • Grated Cheddar Cheese
  • Tortilla Chips
You can however use whatever veggies you have!

Tangy Lime Cilantro Dressing - To Die For!!
  • 1/4 cup Olive Oil
  • 1/2 cup Sour Cream
  • 1 limes' juice and zest
  • 2 tbsp. Red wine Vinegar
  • 2-4 tbsp. Cilantro
  • 2 cloves Garlic
  • 2 tbsp. Honey
  • Few dashes of hot sauce (too taste)
Throw in a food proccessor and blend. YUM!
